Eggplant Parm


I have been wanting to try to make eggplant parm and i finally bought an eggplant so i could try it out.

I used this recipe (sort of)

I have never seen Kathy's blog before but i think i will be looking it over more thoroughly since this was sooo awesome!

Changes i made...

instead of dry breadcrumbs, I used a sleeve of saltines crumbed in my food processor. I added garlic and fresh oregano to the grind.

and instead of sauce under the eggplant, i used diced tomatoes, garlic, and chopped onion.

and i bought my cheese pre grated
