Bacon Wrapped Stuffed Chicken



Sound good? YEA! well I had this idea, So I went looking for a recipe for this, and i just couldn't find one.

What do I do if i cant find a recipe? I MAKE ONE!

So here we go!

Bacon Wrapped Stuffed Chicken
Take four boneless skinless chicken breasts
Butterfly them..... lay them out on a rack

Get your self a box of stove top, and fix it in the microwave, (I mean if you want to you can make your own but i felt lazy the day i did this....)

Stuff the chicken breast with 1/4 of the stuffing. yea i know the thing wont close around it that's OK....

then we are going to take the bacon, and start wrapping (slightly overlapping) the bacon around the chicken breast. I used four slices on some, Just keep wrapping until you get the whole breast trussed up with the bacon. (it kinda reminded me of wrapping someone with an ace bandage)

after you have all four wrapped, place in an over at 350 degrees. and you are going to bake them for a while... I am thinking i did mine for an hour or so. MAKE CERTAIN you get a temp reading of 180 degrees in the chicken AND in the center of the stuffing.

While this is baking, get yourself some baby carrots and put them to boil, and in a Pyrex 2 cup measuring cup put in 1/4 cup of maple syrup, 1/4 cup brown sugar, two tablespoons of butter, and three tablespoons of corn starch and 1 teaspoon of nutmeg.

you are going to heat this in the microwave for about a minuet but don't walk away you do not wan this to burn.

This is how your chicken should look when it comes out of the oven... OMM NOMMM...

your carrots should be done by now too, drain them and pour your sugar mixture over your carrots. heat them slightly to thicken.. DON'T LET THEM BURN!

the smokiness of the bacon and the sweetness of the carrot glaze combined with the seasoning of the stuffing just is WOW in your mouth!
